Christopher Kimball’s Rules for Apple Pies: 1. Use a mix of apples. Older varieties are best; avoid Fuji, Pink Lady, and Gala. In a pinch, turn to half-Grannies and half-Macs. 2. Use just a half cup sugar or a tad more for a deep dish pie (roughly 8 cups of apples). 3. NEVER add cinnamon—it’s overpowering. In fact, you need no spices at all, with the exception of chopped crystallized ginger (optional). 4. Use three or four tablespoons of lemon juice and two tablespoons of flour as a thickener. 5
